210 sounds reasonable, but why not leave it running all the time?
Thats what I am doing, I have a fan with three speeds, currently I run it on high all the time, its only a 70cfm fan so its not a large air mover, but it seems to make a good difference, and the engine still warms up fine, maybe a little slower than stock.

Depends on wether the sensor is in the oil line or on the cooling fins.

Ive done a couple fan kits and normally do it on a toggle, although180-210 is as hot as I would go for the sending unit.

Your gonna want it as a puller fan because it has a better tendency to pull the heat out
