I know this topic has been discussed before but had no luck searching for my answer.

I would like to know what is the easiest way to make the swap without removing all the rear plastics.

Go to the tutorials section, it's titled something like "raptor shock installation", it's on the first page. I even posted some pictures of the installation. Following those directions is the easiest way to do it, it's not even remotely possible to do without taking the plastics off.
 
You should be able to remove/install the shock without taking off the plastic, I've done that many times. The only concern is the airbox, but even that you can remove without the plastics off.
 
Does the warrior handle better, do you have adjust the shock to a softer setting. How much higher will the rear stance be. Are there any issues with the chain or rollers
